Searches were conducted in recognized academic databases using combinations of keywords related to digital marketing, social networks and SMEs. Out of 2,444 preliminary articles, ten studies met the inclusion criteria. The findings show sustained growth in literature and business adoption of social networks, peaking in 2024. Instagram, Facebook and WhatsApp are the most studied and used platforms, while Brazil, Mexico and Argentina concentrate most research. Benefits include greater reach and brand visibility, conversational commerce and omnichannel strategies; however, barriers such as lack of training, limited resources and technological gaps persist. The review concludes that social networks are a strategic pillar for Latin American SMEs and highlights the need for training programs and institutional support to optimize their use.
Sensory profiling is a technique used to describe and evaluate the sensory characteristics of a product, such as flavor, aroma, texture and appearance. This methodology is fundamental in the food and beverage industry, since it allows the identification of organoleptic properties, that is, those that are perceived through the senses. To carry out the sensory profile, panels of trained tasters are used to rate the characteristics of a product according to a defined scale, thus generating a detailed profile. This facilitates the comparison between products, the improvement of their quality and their adaptation to consumer preferences.

In the case of cocoa, tasters evaluate specific attributes such as sweetness, bitterness, acidity and fruity notes. This study focused on identifying and classifying the scientific literature on the sensory analysis of cocoa, examining variables such as fermentation, physical-chemical analysis and the sensory characterization of its attributes. Additionally, the use of virtual platforms specialized in sensory analysis was explored.

The collection of information was carried out through a search log that recorded relevant data, such as search date, source, criteria, findings and references, guaranteeing an orderly and detailed process. The search period spanned the last four years to ensure the inclusion of recent and relevant research. This approach allowed the analysis to be structured effectively, providing a solid foundation for future studies of quality and consumer preferences in cocoa products.

Liana Carolina Ovalles Pabón Andrea Estefanía Barajas Luz Karime Jaimes Copyright (c) 2025 2025-09-10 2025-09-10 1 01 16 32
